Pumpkins Are More Than Just Jack-O-Lanterns and Pies

Halloween is right around the corner which means jack-o-lanterns will soon be lit. And what do jack-o-lanterns mean? Leftover pumpkin seeds! Hallie’s Healthy Hacks is here to tell you what to do with them. These easy, healthy recipes will be your go to during the Halloween season.

Roasted Pumpkin Seeds

This salty, crunchy snack is the perfect replacement to chips during your Halloween diet.

Directions:

1) Preheat the oven to 300 degrees fahrenheit

2) Toss the seeds in a bowl with melted butter and salt

3) Spread the coated seeds in a single layer on a baking sheet and bake until golden brown, tossing occasionally (about 30 minutes)

Sweet Pumpkin Seeds

Crunchy, sweet, and salty. What more can you ask for?

Directions:

1) Preheat the oven to 300 degrees fahrenheit

2) Toss the seeds in a bowl with melted, salted butter, and sugar

3) Spread the coated seeds in a single layer on a baking sheet and bake until golden brown, tossing occasionally (about 30 minutes)

Barbecue Pumpkin Seeds

Out with the summer BBQ and in with the Fall flavor!

Directions:

1) Preheat the oven to 300 degrees fahrenheit

2) Toss the seeds in a olive oil, salt, brown sugar, chipotle chili powder, and ground cumin

3) Spread the coated seeds in a single layer on a baking sheet and bake until golden brown, tossing occasionally (about 30 minutes)

Candied Pumpkin Seeds

A sweet treat for a sweet season!

Directions:

1) Preheat oven to 350 degrees fahrenheit

2) Cook pumpkin seeds in a medium nonstick skillet over medium heat, stirring often, 8 to 10 minutes or until puffed, not browned, and transfer to a medium bowl

3) Mix ½ cup granulated sugar, ½ cup brown sugar, 1 tablespoon paprika, and ¾ tablespoon salt in a bowl

4) Toss pumpkin seeds with orange juice. Stir in sugar mixture, tossing to coat. Spread in a single layer on a parchment paper lined pan

5) Bake at 350° for 6 minutes, stirring once. Cool in pan on a wire rack for 30 minutes.
